The Spices Garden is the hotel’s Vietnamese restaurant. Chefs Madam Van, who has worked in The Metropole kitchens for more than 20 years , forms a duo familiar with all the secrets of traditional Vietnamese recipes, such as Pho, the very popular Vietnamese soup that one can buy from vendors on every street corner in Hanoi.
Every lunchtime there is a spectacular buffet: overflowing with a multitude of entrées and main courses. Hanoi nems and spring rolls from the north, prawns with lemongrass from the Hué region, Saigon chicken, plus an infinite variety of ways of preparing beef including a recipe formerly used for cooking tiger meat.
