Botín: where quality is a tradition
Founded in 1725, Casa Botín is, according to the Guinness Book of
Records, the oldest restaurant in the world, and its traditional cuisine is amongst
the most prestigious in Madrid.
The house specialities are delicious Castilian-style suckling pig and
lamb, roasted in the old wood-fired oven which also dates back to the
restaurant’s foundation in 1725. The suckling pigs hail from Segovia, whilst
the lambs are reared in Burgos, presenting first-class produce which is
accredited by the respective seals of quality, Cochinillo de Segovia and Cordero
de raza churra with Protected Geographic Identity certification. The menu also
features other meats, such as steak and pork loin. Concerning products from
the sea, the finest seafood and fish are selected daily to prepare more of the
restaurant’s famous dishes: clams a la Botín, cuttlefish in ink and Madrid-style
hake with the house's unmistakeable special touch. Of course, we cannot forget
the traditional Castilian garlic soup served in winter and the refreshing
gazpacho which cools guests in summer. Special mention should also be made
of the restaurant's large and renovated wine cellar.
Botín combines tradition and quality in its honest, reliable cuisine with the
coveted touch of excellence that can only be achieved with first-class
ingredients. The recipes have been passed down from parents to children over
the years, and continue to be prepared in the most natural, time-honoured way
by the master bakers and expert chefs who have dedicated their whole lives to
the restaurant. At Botín, guests are served traditional tastes. In the kitchen,
originality means going back to the roots and exhuming the essence.
In its dining rooms, Madrid’s famous hospitality materialises into a warm
and friendly atmosphere, in which famous stars and everyday customers are
treated with exactly the same affection and special care.
Botín boasts countless mentions in literature: It appears in Fortunata and
Jacinta by Galdós, in Hemingway’s The Sun Also Rises and Death in the
Afternoon, and Ramón Gómez also dedicated some of his Greguerías to the
restaurant. A range of national and international celebrities have become firm
regulars.
