Inaugurated on September 26, 2006 by Isaac Azar, Paris 6 always transcended the gastronomical concept, inspired by centenary Cafés, Bistros and Brasséries of the 6th Arrondissement of Paris (also known as Paris 6). Among the inspirations are the Café de Flore, the Brassérie Lipp and the first Café of the city, Le Procope, opened in 1686. Isaac's idea was quite simple, yet awe-inspiring: to make a cultural bistro, opened 24 hours a day, 7 days a week, serving with no roundabouts delicious dishes for all kinds of audience. Currently, Paris 6 serves more than 70 thousand customers every month.
