Witht one Michelin Star, Gaytan is a surprise. It catches you off guard… and makes you feel good. Our oval shaped open kitchen allows diners to quench their curiosity and feast on Javier Aranda´s creativity. A space where culinary excellence meets interaction.

His proposal: «progressive cuisine», a cuisine deeply rooted in Spanish culinary traditions. Aranda refines them with research, new products and technologies, but his goal and final success is to open them to the world in a radical cosmopolitanism of tastes.
Javier Aranda had a dream and he made it true: «Gaytan», his new gastronomic center. Few more than half a dozen tables, strategically placed around the chef and his team, make customers feel inside the kitchen. Customers may enjoy the elaboration process in real time while their questions are welcomed.
