Raugis is the restaurant of the Bardi owned wilderness camp Kooljaman, at Cape Leveque.
Kooljaman is the Bardi name for the place Raugis is situated, Cape Leveque is the name taken from Pierre Leveque, the oceanographer who mapped the peninsula in 1802.
Raugis menu is a fusion of French and Bardi influences combining the classic French style of sauces, purees and gels with Bardi flavours and the smoke of open fire cooking.
Dine overlooking Western Beach at Raugi’s Restaurant Kooljaman based at the Kooljaman at Cape Leveque wilderness camp North of Broome, accessible only via private airstrip or 4WD. The complete dining experience at Raugi’s offers an open air setting among the trees with exclusive views over the red Pindan cliffs out to the Indian Ocean, dazzling at any time of day, but a moment to remember at sunset. Ingredients are foraged locally and feature on a seasonal menu in contemporary dishes like white wine braised belly of pork, crispy crackling, celery root puree, riberry compote, illarr gel, mustard jus with apple crisp and munthari berries.
