With a modern and stylish setting, a menu that focuses on all-Prime beef, and tableside preparations that demonstrate the highest level of service, Baltaire redefines the traditional steakhouse. Opened in March 2015 in Los Angeles’ Brentwood neighborhood, the expansive restaurant’s airy dining room, fireside lounge, and sprawling outdoor terrace makes it the ideal dining destination for a variety of occasions—from a relaxed dinner with friends to closing a deal with colleagues over lunch to enjoying weekend brunch with family. Executive Chef Travis Strickland’s upscale, yet approachable menu spotlights premium meats, complemented by a variety of dishes that celebrate the bounty of the sea and the local markets. An eclectic and well-balanced wine list from top global producers, signature cocktails, and an extensive rare spirits selection enhance Baltaire’s menu, service, and ambiance to expand the vernacular of the steakhouse.

Chef Strickland, who hails from prestigious Chicago steakhouses, has crafted a contemporary menu with exceptional meat and seafood at its foundation. Highlights include A5 Japanese Wagyu, bone-in filet, Porterhouse, and 35-day, Dry-Aged Côte de Boeuf for two—all served with new takes on iconic steakhouse sides. While modern in approach, Baltaire revives certain time-honored traditions with its tableside service. Presented in French copper pans, sautéed Dover Sole is fileted and deboned in front of patrons; a Greek salad and its dressing are completely prepared on the spot; and tableside matcha green tea is steeped before a guest’s eyes in bowls glazed by a Brentwood artisan. In addition to Baltaire’s decadent steak and seafood dinner entrées, a selection of lighter soups, sandwiches, and salads round out the lunch menu, while weekend brunch features decadent egg dishes and housemade pastries. Sample dishes include:
USDA Prime Steak cuts from 8 to 40 ounces, with additions and sauces like king crab Oscar, blue cheese fondue, au poivre, béarnaise, or Baltaire’s signature steak sauce.

The beverage program features fresh produce, housemade syrups, and infused spirits into a cocktail menu that showcases contemporary interpretations of Prohibition-era cocktails. Baltaire’s approachable New and Old World wine list offers an impressive depth and breadth, with a range of vintages from Burgundy and first-growth Bordeaux; small verticals of California Cabernets from pioneering Napa Valley houses like Ridge Monte Bello and Dominus Estate; and bottlings of Nebbiolo and Sangiovese for less conventional steakhouse pairings. Guests can enjoy 30 options by-the-glass and more than 450 half bottle, full bottle, and magnum options starting at $50 per bottle. An extensive selection of premium and rare single malt Scotches, cognac, Armagnac, and amaro offer a complete study of spirits from around the world, like Springbank 25-year, Hardy Perfection (#410 out of 600 in existence), and Pappy Van Winkle 15-,20-,and 23-year.

Awash in hues of kelly green, slate grey, and walnut brown with French oak flooring throughout, Baltaire presents a seductive and inviting 68-seat dining room with brass-foot chairs that overlook a glass-enclosed kitchen with gleaming white subway tile walls, custom copper hoods suspended over white marble countertops, and industrial shelves displaying spices. With the mid-century, modern-inspired design, the room is flooded with natural light from a large skylight and floor-to-ceiling accordion glass doors, which lead out to the massive 2,500 square-foot terrace, featuring seating for 90, a retractable roof, Eame-Eames-style, curved back chairs, outdoor fireplaces, and lush vegetation such as herb and citrus trees. Adjacent to the main dining room is a dimly lit cocktail lounge that channels an upscale steakhouse vibe with rich, dark woods, a variety of textured leather armchairs, brown leather Chesterfield couches, herringbone and plaid patterned furniture, a baby grand piano for live musical performances, and an indoor fireplace.

Baltaire also serves as an elegant event space for corporate meetings, award banquets, and VIP functions, with its seamless indoor/outdoor atmosphere and private dining room, which features a white marble fireplace and glass walls displaying the restaurant’s wine collection.
