41 Degrees South Salmon and Ginseng Farm is a family run, sustainable inland farm located in the heart of Tasmania’s north, just outside of Deloraine. The farm grows Atlantic Salmon and Ginseng.
The salmon are grown in 20 concrete tanks using the fresh waters from the Western Creek Rivulet. The water flows from gravity fed pipes down the lower half of the Montana Falls, into the salmon tanks and through a natural and man-made wetland. The wetland acts as a natural biofilter for the fish waste and becomes home to a plethora of native flora and fauna.
The salmon are hot-smoked on site and delicious products are made using an artfully crafted brine of secret herbs and spices. These products include hot smoked baby salmon, boneless snack portions and fillets and also a salmon rillettes spread.
The ginseng is also grown on the property and the medicinal herb is put into a wide range of products from an essence to honey, spices nougat and chocolates.
The farm is open 7 days a week to the public for self guided farm tours and light café lunches.
