The food at Uoksas is built on principles of the nature, the menu itself is changed 2-3 times per each season of the year, which reflects particular time of the year. Our philosophy stands on building a produce ,,basket" of that what we get from local farmers and producers, than we apply our techniques (some of them modern and classical, some of them very native and traditional) by doing that we are trying to give dishes new look and taste of traditional cuisine. So for us the most important thing is to show how our produce is unique, to rebuild traditional cuisine with a modern techniques and presentation, focusing on local produce and sustainability. So our vision that one day we could achieve culinary identity by bringing to guests new Baltic cuisine which is unique by its produce and traditions.
